My wife and I live in Las Vegas, Nevada which has a very dry atmoshpere. Our cornbread is dry!?


We tried adding more water and it didn't seem to help much. Suggestions for a more moist cornbread?

Unfortunately....this is common with all breads, pie crusts, Pizza Doughs, pastries, cookies, muffins, donuts, or any other form of food product in this baking catagory.
Las vegas is just too dry to bring out the best in great recipes!
The water also contributes to a lesser product!
Been here 37 years and every time I go east for a visit and eat great pizza....I realize how limited we our with all these comfort foods.

add more oil or a small can of cream style corn

You can't go wrong with adding sour cream. You may have to experiment with the amount, because altitude and dryness/humidity willl make your recipe needs very specific. If you do use cream style corn (which is great advice, I do it all the time), buy the frozen kind. It'll be in a log shape (like ground turkey) by the other frozen veg. Paula Deen swears by it, and so do I. Tip: mince half a jalapeno pepper and add to the batter. It gives the bread the slightest bit of heat and goes great with chili!

You must be from the East Coast like me. The water here is so hard. Back east it was soft water. Try this and it may help. Go to one of the kioks where you pay $..25 cents a gallon for water. It is softer and treated. I used that water to make my pasta and big differnce.
I have a house now with a water softner and also see the difference in some of my meals.

You may not need to cook it as long. Altitude may be the problem.

Add another egg & you can also add whole corn! I lived in Boulder City yrs. back & it does affect your baking! I thought that only happened in high altitudes!

try adding honey or dry milk directly to your mix. Dry milk is great for keeping food moist. Are you doing this by scratch or a store mix? I don't know what else to suggest, I live in seattle and are are never short on moisture

Substitute 1/2 cup of the oil with applesauce.
