Will my U.S. "Visa Traveler's Cheques" be easy to use or redeem in Cuernavaca, Mexico?

This will be my first trip there, so I wanted to be sure that I will be able to use them while on my vacation. Any suggestions from people who have knowledge and experience with the area would be greatly appreciated.

American Express only !!!

In established stores yes, but if you go to a street market you will not be able to redeem them.

However you can easily cash them at the bank, and most banks will not charge you a fee.

Main attractions accept it, but be careful because the exchange rate may vary and you could lose a couple of bucks, find a bank or a Casa de Cambio, to exchange what you think covers your daily needs

Sure! Today I went to a Bureau of Change in "Plaza Laurel" (North Cuernavaca) to buy some dollars and the only requirement for changing traveler cheques into Mexican cash is to show your passport and something that prooves your address in Cuernavaca.
I'm not sure if you can pay with cheques in places such as restaurants, hotels, etc.

Yes they're accepted ... but only in large stores and hotels. You're better off to go to an ATM machine and get cash ... that's what everybody else does. Mexico is a cash economy. ...
